I’m one of those people that can’t go too terribly long without eating. If you are one of those people or if you have kids that come home from school a little “hangry” then these quick and easy energy bites are just what the doctor ordered! They are filling and can help the grumbling stomach until it’s dinner time.
1 cup rolled oats. (it helps to pulse the oats for a few seconds in your food processor)
1/2 cup almond butter
3 tablespoons of honey or Sorghum
1/2 cup dark chocolate chips
1 cup pitted dates (chopped)
1 tablespoon cocoa powder
2 teaspoons of vanilla
1/8 teaspoon salt
1 teaspoon cayenne pepper (optional)
i cup of your favorite nuts ( I use 1/2 cup of walnuts and 1/2 slivered almonds)
1 teaspoon cinnamon
1 tablespoon instant espresso coffee
Pulse the rolled oats in your food processor for about 20 seconds. Add the cocoa powder, salt, cayenne and cinnamon and pulse for a few more seconds until well blended. Pour dry ingredients into a mixing bowl. Place your favorite nuts in the food processor and chop until they are fine but not “dust”. Place the nuts in with your dry ingredients and stir. Add remaining ingredients and stir well making sure that everything is mixed throughly. Once your “dough” has taken shape place it into the refrigerator for at least an hour but as long as overnight. Remove from the fridge and form into individual balls. For a little added sweetness and texture, I like to roll my bites in toasted coconut. Place in an air tight container or on a plate and cover. I like to keep mine refrigerated but it’s not absolutely necessary……..they just last a little longer when they are cold. The great thing about this recipe is that you can truly make it your own. Mix up the ingredients and use peanut butter, raisins, dried cherries, sunflower seeds, quinoa or sesame seeds. Just about anything works for these delicious and easy little energy bites!!!
