Grilled Tuna Steaks with Pineapple, Jalapeno Salsa

Pineapple Salsa
1 1/2 cups of diced fresh pineapple
1 large jalapeno diced with seeds removed
1/4 cup of diced purple onion
1/3 cup of fresh cilantro
1/4 cup of fresh mint
juice of one lime
1 tablespoon of vinegar ( I like to use red wine or apple cider)
salt to taste.
Mix all ingredients together and place in the fridge for at least one hour

Let your grill heat to medium high and then place tuna on the grill for 3-4 minutes per side depending on how “done” you prefer your fish. Place your tuna on a plate and top it with two tablespoons of salsa. I love to serve this dish with a side salad and cilantro rice. See below for recipe……

Cilantro Rice
2 cups of water
1 tablespoon of butter or olive iol
1 cup of long grain white rice
1/2 teaspoons of lime zest
2-3 tablespoons of fresh lime juice
1/2 cup fresh cilantro chopped and packed
Cook the rice according to package directions. (about 20 minutes)
Just before rice is fully cooked, add butter, and all other ingredients and stir well. Serve warm.
